The California rice industry provides thousands of jobs and contributes over $500 million to the state's economy each year. Approx. two-thirds of the crop is sold in domestic markets including breakfast cereals, baby food, rice cakes, beverages, and table rice. To encourage Japanese children to eat all of their rice, the grains are affectionately called little Buddhas.
Rice Terminology
Rice Flour: Rice ground into flour which can be used in place of wheat flour for baking. Rice flour has no gluten, a protein found in wheat flour. Since rice is non-allergenic, this flour is particularly valuable to individuals allergic to wheat flour products.
